Margarita Rocks!

One of my favorite adult beverages is Margarita Rocks with salt.

My recipie nowadays is to buy any margarita mix in the large bottle, pour into a large pitcher, add a good quality tequila (maybe half a bottle tequila to a large bottle of mix), then add a splash of Key Lime Juice - be careful it is easy to go overboard - I use a generous capful per pitcher.
(This is the secret ingredient , I like NELLIE & JOE'S Famous Lime Juice - we found it in an Los Angeles grocery and it is also available for sale through their web site).
Add a dash of sugar and stir. Serve by adding a splash of Cointreau to each glass as you serve. Salt the rim of the glass by using the lime from a lime slice on the rim to hold Kosher Salt.

Or if you prefer individual drinks: (Makes 1 Margarita)

    • 1 1/4 oz Tequila
    • 3/4 oz Cointreau (Triple Sec is an option here, cheaper but not quite as good -you could also use Grand Marnier or Patron makes an orange liquer called Citronage that is good and less expensive)
    • 1 1/2 oz Lime Juice (best fresh squeezed) or Margarita Mix
    • small splash of Key Lime juice
    • small amount of sugar
    • Lime Wedge
    • Kosher Salt
    • Ice
    1. Put a layer of Kosher salt in a flat dish.
    2. Run a lime wedge around the rim of the glass to wet it.
    3. Touch rim of glass to salt, add ice to glass.
    4. Put the Tequila, Cointreau, Lime Juice or Mix, Key Lime juice, and sugar into a cocktail shaker. Shake vigorously for a few seconds.
    5. Pour overice into glass.

For a terrific Raspberry Margarita substitute Chambord for the Cointreau!

or try the Ron Finley 3-2-1 Margarita.

Simple, easy to remember - even after a few. Perfect for mass production at parties. Just mix, salt and serve!
    • 3 parts Tequila
    • 2 parts Triple Sec
    • 1 part Real Lime Juice

or for the ultimate try The Topolo Margarita

    ...from the great Chicago restaurant
    Frontera Grill/Topolobampo
    (445 N. Clark)
(Thanks to John Montgomery for this one)

    • 1/2 cup fresh lime juice (~2 limes)
    • 1/4 cup water + one teaspoon sugar
    • 10 tablespoons water

    To this add:
    • 3/4 cup good tequila
    • 2 tablespoons Grand Marnier
    • Ice

Shake and strain into chilled glasses.

OK, if you're this far down you may want to make the previous one in quantity.
I had to call another expert for his recipie, my brother-in-law Hank.

2 cups fresh squeezed lime juice (about 15 limes)
      2 cups water
      1cup sugar
optional a splash of key lime juice and/or orange juice
Let sit for 30 minutes or more.

Ready to mix up a batch... 60/40 mix of mix to tequila in a shaker or pitcher. Add a splash of your choice of Cointreau/Grand Marnier/Citronage at serving time.
